Simpson Health Center Certified Dietary Manager
Purpose of the Position
To plan, organize and direct the overall operations of campus dining services (SHC, Gardens & River Ridge) including but not limited to dining personnel, budgeting, menu planning, ordering and storage, food preparation, food delivery presentation and resident satisfaction.
Responsibilities
· Works with Registered Dietitian and dietary team members to ensure nutritional needs and quality standards are met at all times.
· Understands and implements all sanitation standards and complies with, local, federal and state rules and regulations as they pertain to food service at all levels of care.
· Confers with the registered Dietitian and other key personnel to plan menus and related activities for all campus dining rooms and banquet operations.
· Works with Human Resources to recruit, select and train personnel; conduct previews and enforce all polices with each employee.
· Supervise food production for the Simpson Health Center/Journeys and assisted living neighborhoods following facility standards for food quality, customer service and sanitation.
· Assist with planning and implementing menus for both regular and modified diets utilizing standardized recipes.
· Maintain daily and monthly temperature documentation.
· Ordering groceries & supplies via authorized FH vendors.
· Organize and conduct regular team meetings.
· Maintain Simpson Health Center and assisted living resident and guest meal counts.
· Assist with planning and production for special events, as needed.
· Develop policies and procedures in accordance with prescribed regulations.
· Investigates and resolves food quality and service complaints.
· Takes particular responsibility for the dining experience and customer service.
· Assigns, supervises and evaluates all levels of dining service personnel, develops a staffing schedule to ensure adequate coverage or delegates these duties to appropriate personnel.
· Embraces and provides service to our residents based on a resident centered model of care.
· Develop the dining service budget and maintain fiscal accountability.
· Attend required staff meetings and complete required continuing education.
· Responsible for attending Resident Dining Committees for the SHC and Assisted Living areas of campus.
· Will work to consistently review current recipes and new recipe development.
· Ensure that Dining Services has at least one Certified Dietary Manager (CDM) at all times.
· Other duties as assigned.
Knowledge, Skills and Abilities
· Knowledge and understanding of a social model of service delivery within households.
· Knowledge and understanding of food codes and dining services as contained in nursing facility, assisted living and adult day regulations.
· Knowledge of aging issues and Alzheimer’s and other dementia-related illnesses.

Minimum Requirements
· Education: Bachelor’s Degree in hotel management, business or related field, or equivalent experience in the food service/hospitality industry.
· Experience: Management/Supervisory Experience, Long Term Care experience preferred.
· CPR and ServSafe Certification, or the ability to become certified within 6 months of hire.
· Certified Dietary Manager or the ability to become certified within 1 year of hire.
Physical Demands
· Sits, stands, bends, lifts and moves intermittently during work hours.
· Willing to work beyond normal working hours, and on weekends and holidays when necessary.
Mental Demands
· Subject to frequent interruptions.
· May be subject to hostile and emotionally upset residents, families and visitors.
